I just got "inspired" to make a Salvager character. Not sure what species I'm gonna use or what ship.

So I need some assistance: what salvage ships are there?

I know about the GS-100 salvage ship but idk of any others?

(I'm thinking of making a Jawa, the experts of salvage)

Not necessarily. A Jawa can be socially. While challenging, can be done.

Well, There aren't a lot of small-scale salvage specific ships, since single-person salvage ops tend to be extremely dangerous. That being said, it isn't particularly difficult to modify an existing transport for use as a salvage ship, since technically all you need is a store of parts (or a machine/electronics shop), time, and a copilot to fly it to wherever you want to sell it. Alternatively, installing slave circuitry [link] allows you to control any ship with that circuitry remotely (there are a few limitations, so you can't just jack anybody's slave-circuitry equipped ship for shits and giggles), even through hyperspace, so that's another useful option.

In terms of which ship might be useful, I'm personally very fond of the Barloz Freighter [link]. It's not equipped, by default, for salvaging (not many ships are) but it's got a lot of useful amenities and nothing particularly outlandish. Additionally, the 578-R [link] would work as well, since once you swap out all the parts with decent kit, it's not a bad frame. Not to mention it's used more-or-less like a salvage ship in the legacy canon. The Ghtroc 720 [link], XS-800 [link], or the YU-410 [link] will all work as well, with a bit of shoe-horning and modifications. If you want to go a more eclectic route, you can also go the route of one of my characters and build something like this monstrosity [link], but I'd suggest going with something less grandiose your first time out.
