Would an Epsilon-1 Starfreighter plus crew be an ok starting ship for my freelance merc? I was thinking three NPCs and myself.
My NPCs will have their own pistols and rifles. Reznikov will be having an e75 blaster as well.

Probably not since the Epsilon's in the archives I believe, and unless an Admin (In this case probably the Tech Admin, Jiang) has posted it in it saying that it was moved there for being generic enough to not require approval it probably isn't allowed to be used. You can always use a canon design that isn't a capital ship (under a 100 meters) and is reasonable like the good old YT-1300, or even a fighter like the Y-Wing.

As for NPCs, meh. I'm pretty sure as long you're not using them to be make the character itself overpowered they're okay but from what I've seen it's mostly preferred if it's just like droids or pets. Maybe a travelling companion, but you don't want to go overboard with them by giving yourself a squad of heavily armed folks who travel with you everywhere you go. Otherwise your character ends up not doing much but standing around giving orders.

Correct me if I'm wrong but if it's generic enough not to require approval doesn't that mean it doesn't need approval and is therefore fair game?

That's what I would figure. My ARX blaster was archived but I got told it actually didn't need a write up.

Do you think an upgraded XS stock freighter would be ok?

Probably, unless it's really, really upgraded to being so different from the base that it might require a tech writeup.

I guess? Unless it's something like a sword that's supposed to be unique to the person but wasn't really worth a tech writeup. As long as it says something along the lines of being for free use, and Jiang's posted to say that it's generic I imagine it would be.
