At what point is it sufficient to say one side or another has won? Are we fighting until the other side submits? No limb-chopping I hope :O

I'd planned to just play along as it all develops, but earlier I had wondered the exact same thing. I don't think we have a referee calling out points

We're basically assuming training settings or training sabers, so most you can do is bruise or break a bone. Light burns.

called training sabre. Or training mode on a normal sabre. They more like stun battons. Typically a winner either hits, disarms or force the loose to give up. After 2 weeks real time the fight is over then the admins will rule.
