One thing the staff has been saying as we've been fleshing out a basic concept is that while it's post-Legacy era, what's nice is that it's still like 850 years after the Legacy era. We don't have to worry about what was canon in 140 ABY too much, and there's no canon ahead of us. There's a lot of freedom in this timeline.

Star Wars tech is actually by far more advanced before the Jedi and Republic. The ancient civilizations, especially the Celestials, were technological gods. It all went insanely downhill after Rakatan oppression took over the galaxy.
