However, since they have space travel, they have access to sources of energy large enough to propel someone to near light speed. Plus, it would only be one character and it might make the character more interesting as he would have to navigate through a vastly changed world.

Actually, I was being honest about that like I am with most things. I'm simply trying to use a fairly well known fact to add a little spice to a character who is not that interesting.
Time dilation is a well established fact here on Earth and with the power to do it in a galactic civilization, I see little legitimate reason why it shouldn't be allowed. While it could be overused, I don't think anyone would really do that. Perhaps I could have such a character appear in the story several months later and he would have aged less over those years based on how fast he was going. And because of his time spent alone as well as his absence from the rest of the universe, it could provide the opportunity to try to find out what's happening.
I think you're spending too much time worrying about how to make your characters unkillable and not enough time worrying about how to make them interesting.
