I'm curious as to were all of the information on the Jedi is put. I've been reading stuff about the class system from KOTOR, Guardians, Sentinels ect. As well as talk of only have one form. I've looked but can't find information on this anywhere on the Jedi board. Can someone please point me in the right direction?

I thought that was just a guide thing. Not actual rules for the Order. Also I read on the lightsaber forms/styles part and there's no mention of having only one. Is that true?

Also thanks for the quick help.

In many cases, the guides are the rules, but if you mean a "Do's and Don't's" type list of rules, they don't exist.

Also, you do not have to have only one form. Padawans can only know one form initially (probably one style too, but most peeps seem to look over that), but what you're thinking about is probably mastery of a form. In that case, Padawans and Knights can only know/master one form.

Also, np.

just worry about making it as a padawan and become a knight. Once you're accepted into the order, choose either blade (guardian), diplomat (sentitnel), lore (force user), or sage.

You can find information on the number of forms available in the Standard Profile Template here.

LIGHTSABER/SWORD FORMS:
Add in the lightsaber/sword forms your character knows as he/she learns them. Please keep in mind the rules for knowing lightsaber/sword forms. At the Jedi Padawan and Jedi Knight skill level, you may only know one form. If your character reaches the Jedi Master skill level, you may know two forms. If a character becomes the Faction Leader or is at the Jedi Council skill level, they may know a third form but it is preferred that they do not have a mastery over the third.

Why have the forms known been limited so much? A master can only know 2? Mace Windu knew all of the forms...

Only because he's Samuel L. Jackson.

He knows everything.

He's in everything.

Most Jedi only knew about three forms or so, including Shii-Cho (the basic) with all of em. Obi-Wan knew Ataru and Soresu. Anakin knew Shien/Djem So and Ataru. Dooku was straight Makashi, and Maul knew Juyo and Niman.

All in all, aside from Battlemasters and extremely powerful Councilors, most Jedi only knew about three by the time of Masterhood or status (ie. Anakin's case).

Jedi are taught more than one form as a padawan. It's their decision to pick one to Master, Windu only mastered Vaapad in which he created.

It doesn't have much bearing on RP, either. People will still strike and block as they see fit regardless of the form. It's more a description of how your character might approach the combat, I guess. Someone that knows Ataru can be expected to leap around and flank more, someone that knows Shii-Cho will strike at critical points, Soresu will defend, etc. Even if a guidebook existed that described the movements of each form, I wouldn't expect everyone to read it and adhere to it in order to RP.

Pretty much what Xyrael is saying here, it'd be way too difficult to have everyone adhere to something like that. Instead it's just best to teach a style the padawan might prefer from an ooc standpoint and simply go from there.
