Hello! I am sure there are some enthusiasts amongst you, with a lot more handle on this than me.
Long story short is that I am looking to buy myself a new system, and deemed around 1.5k USD to be around what I was willing to spend on it.

For exactly 1471 dollars I can get the following notables in a complete, custom made system:
i7 6700k 4.0-4.2 ghz - CPU
16gb 2133mhz corsair ddr4 - RAM
B150m-a m.2 - Motherboard
Gtx 1070 oc - GPU
240gb ssd kingston 550 mbs/s - HDD
Asatek liquid cooling system.
550w 80+ certified xfx pro series - Power supply
Win 10 (not really sure how to circumvent this cost, as I want to run Windows - any ideas?)
A pretty dope, nice airflow cabinet.

How does that look, value-for-money?
For the record I already have 2TBs of HDD space on externals.
The only questionmark is the worth of upgrading the 1070 oc to a regular 1080, since I don't plan on doing above 1440 resolution. Then I am thinking maybe the RAM could be upgraded in size (to 32gb obv) but also to 3200 mhz.

Any feedback appreciated, before I make this squander :-)

Looks like a solid build. I'd almost advise you to check if you need the 6700 or if there isn't a similar but cheaper predecessor. If the clock is the same you will hardly notice if you use it for gaming. You might be able tobsave a few bucks.
Unless you want to run a server stick with 16GB ram. More is hardly ever going to be used while playing games.
If you don't have a screen yet stick with 1920x1080. It likely to be the standard for a while longer. Don't waste money on 144hz but get a 60hz screen with fast reaction times and good colours/good black.
You can stick with the 1070 if you want but check out the price to value ratio on both cards. Then decid based on that. Both should be able to play recent and upcoming games with the desired graphical briliance.
550W looks enough. Did you do the math? ~100W for the 6700, ~200W for the 1070/1080. Factor in the MB with about 50W (this value I am guessing.) and your fans, CD/DVD/Blueray drives, ram and allnthe little thimgs shoul stay within 50W asnwell. So you got 150W (well really more like 40W with 80+ only) which does not leave you a lot of a buffer in case you ever want to upgrade. Just get at least a silver or gold and at least for this build you will be totaly fine.
Also make sure you know how to plug everything in. Funny enough most people struggle with where to plug in the cases power and reset butons.

I tend to run a lot of simultaneous tasks, though, and might do some streaming/rendering/simulating depending on the day.

Same as above.

That was kind of my reasoning aswell. I already have two screens, 27" and 29" respectively, but screens are not particularly expensive to replace, regardless, which is why I was considering it anyway.

I had already done that a little bit. What is your personal opinion on the two cards? Be aware that the 1070 is the OC version, which I think has higher ceiling than the regular 1070, even when that is overclocked.

Good point on this, I will upgrade to a 650, I think :)

Indeed, I don't think that will be my main issue, though!
