Shii-Cho is just a general form for anyone who doesn't want to focus on a specific way of attack(I.E. defense against sabers, blasters, or offense against sabers, blasters)) so you wouldn't be missing out on anything if you did not learn Shii-Cho.
If you guy learned Juyo, he would have an advantage in light saber combat over others. Often overpowering the defenses of the opponent. So you'd be fine with this style.
